YIELD: 6 ORIENTAL DUCK
COOKING TEMP: 375F PORTION: 3/4 CP
COOKING TIME: 15 MIN COOKING PAN: GRILL AND/OR WOK
INGREDIENTS AMOUNTS PROCEDURES
| Duck boneless ckd : 1 1/4 lb 1. Cut cooked duck into 1 1/2 inch
| Soysauce : 2/3 ts strips.
| Sherry cooking : 2/3 ts 2. Combine soysauce, sherry, and egg
| Egg white indiv : 1 white. Add duck pieces and mix
| Cornstarch : 1/4 cp well. Remove duck pieces from sauce
| Oil : 1/4 cp and dust with cornstarch. Chill 30
| Green onions sliced : 1/2 cp minutes.
| Cabbage chinese raw : 1 lb 3. Stir fry duck in oil. Set aside.
| Water chestnut sliced : 2 Tb Stir fry onions, sliced cabbage,
| Ginger crushed : 2/3 ts water chestnuts, ginger, and
| Beansprouts fresh : 1 cp beansprouts.
| Soysauce : 3 Tb 4. Combine vegetables and duck.
| Sherry cooking : 3 Tb 5. Combine soysauce, sherry, vinegar,
| Vinegar : 1 1/3 Tb sugar and orange juice. Pour sauce
| Sugar : 1 1/3 Tb around edges of wok. Heat until
| Orange juice : 1 1/3 Tb thickened. Stir to mix well. Serve
